Mashed Potato Pizza Dough

  1. Combine the mashed potatoes, flour, yeast and sugar in a mixing bowl. Mix until the dough is fully combined. It will clump together.
  2. Add water and beaten egg and mix with a spatula until incorporated.
  3. Knead the dough until it forms a smooth homogeneous dough. (~ 1 minute)
  4. Divide the dough into 2 balls and cover with oil.
  5. Place the balls into two small covered containers. Let the dough rise for 30 minutes. The dough can be used immediately as in the following steps or kept in the refrigerator for up to 2 days.
  6. Preheat the oven to 475'F.
  7. Oil a pizza pan. Shape a dough ball by kneading it once on the pan. Cover in plastic wrap and let sit for about 15 minutes.
  8. Press the dough into a 14" circle using the plastic wrap.
  9. Keep the plastic wrap cover and allow to rest another 30 minutes or until it puffs slightly.
  10. Bake for 5 minutes on the pan in the preheated oven.
  11. Remove and top the pizza with the desired toppings.
  12. Return to the oven and bake 5 more minutes or until the desired crust crispness is achieved.
